Sweet and Spicy Korean [MOCK]® Chicken Drumsticks with Kimchi Rice

The abbreviation "KFC" brings one thing to mind: moreish crispy fried chicken, representing either the chain "Kentucky Fried Chicken" or Korean Fried Chicken. Both ironically started in the 1950s, with Colonel Harland Sanders in Salt Lake City in Utah and the Korean War 1950-1953. Korean Fried Chicken, often called "chikin," was brought by the American soldiers, and involved cutting chicken into pieces, seasoning, coating in a spiced batter, and frying. Today's modern version of Korean Fried Chicken features a light, crispy, well-seasoned exterior, served with or without sauce. The special sauce typically blends spices, sugar, chilli and soy sauce to create an irresistibly crunchy, sweet and spicy delight that's enjoyed as an appetiser, main course, or an anytime snack!

Ingredients
For the sauce
- 2 tsp vegetable oil
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 50g ketchup
- 2 tsp agave
- 1 tbsp gochujang paste
- 2 tsp white vinegar
[MOCK]® Chicken Drumsticks
Kimchi Fried Rice
- 2 tsp sesame oil
- 2 garlic cloves, finely chopped
- 1 tbsp gochujang paste
- 200g (packed) kimchi
- 50ml kimchi juice, from the kimchi
- 400g cooked rice (can be a day old)
Garnish
- Finely chopped spring onion
- Crispy shallots
- 1 tsp toasted sesame seeds
Preparation
To prepare the sauce
Bring a pan to medium-high heat and add the oil, garlic and onion. Saute until soft then add the gochujang paste. Fry it off for 2-3 minutes then add the ketchup, agave, vinegar and garlic, and cook for another 3 mins. Blend very well, seasoning with salt and black pepper. Set aside.
Prepare the drumsticks
Fry the [MOCK]® Drumsticks at 180C for 4 minutes, and let cool.
For the kimchi fried rice
In a medium-high heat frying pan, add the oil, garlic and gochujang paste. Cook it for 2-3 mins then add the rice, kimchi, and kimchi juice, and cook it for another 2 mins until very hot, seasoning to taste.
To serve
Place the rice on a plate, lightly coat the drumsticks with the wet mixture, and place these on the side. Garnish.
