Fried chicken in various forms has appeared in the cuisines of the Romans, Africans, Asians, and of course the Southern states of the USA, where it defines comfort food. Surprisingly, the modern US fried chicken recipe is credited to the Scots, and was brought to the US between the 17th and 19th centuries. The Scots dredged the chicken in flour and fried in oil, a departure from the boiling and baking methods common in other cuisines. African slaves then developed the recipe further, adding spices to create the iconic Southern fried chicken, often served with generous helpings of mashed potatoes and rich, warming gravy. Ingredients
[MOCK]® Chicken Drumsticks
Mashed Potato
- 300g Maris Piper potatoes
- 50ml plant-based cream
- 50g plant-based butter
- 3 cloves garlic
- 5g fresh thyme
- 5g fresh rosemary
- Salt & pepper to taste
Garden Peas
- 200g garden peas
- Juice and zest of 1/2 lemon
Gravy
- 40g vegan bistro gravy granules
- 560ml boiling water
Preparation
Prepare the [MOCK]® Chicken Drumsticks
Fry the [MOCK]® Chicken Drumsticks for 4 minutes at 180ºC.
Prepare the mashed potatoes
Bring a large pot of salted water to a boil. Add the potatoes, lower the heat to medium, and simmer until potatoes are tender, about 15-20 minutes. When the potatoes are almost done, heat the cream, butter, garlic, thyme and rosemary in a small saucepan over a low heat until the butter is melted. Drain the potatoes and return to the pot. Slowly add the warm cream mixture, blending it in with a potato masher, until potatoes are smooth and creamy. Season with salt and pepper.
Prepare the garden peas
Bring a pot of water to a boil then add the peas and cook for 3-4 minutes. Drain them and add the lemon juice, lemon zest, and season with salt and pepper.
Prepare the gravy
Add the boiling water to the granules and stir vigorously and continuously until you get a smooth gravy.
