[MOCK]® Chicken Paella

The paella tradition began in Valencia, Spain, as the humble lunch of farmers. They cooked rice with ingredients on hand - tomatoes, onions, snails, and beans - over an open fire. Occasionally, rabbit, duck, or chicken were added. This region has produced rice for over 12 centuries, with the name "arroz" coming from Arabic, brought by the Moors. Today there are over 200 "arroces" (rice dishes) in Valencia alone. Paella is named after the cooking vessel (paellera), a flat round pan with two handles. A proper paella always includes a "soccarat," the crispy, caramelised layer of rice that forms on the bottom of the paellera; it's named for the Valencian word "soccarar," meaning 'to burn'. Paella is traditionally eaten from the pan with each person using their own spoon to scoop up the delicious concoction. Ingredients

[MOCK]® Chicken Pieces

Paella

  • 1 tbsp olive oil
  • 2 small onions, finely sliced
  • 2 garlic cloves, crushed
  • 1 tsp turmeric
  • Pinch of saffron
  • 1 tsp smoked paprika
  • 300g paella rice
  • 850ml vegetable stock
  • 200g frozen peas

Garnish

  • 1 lemon, cut into wedges
  • 1/2 small bunch parsley, finely chopped

Preparation

Prepare the [MOCK]® Chicken Pieces

Heat 1 tbsp oil in a pan and fry the chicken for 4-5 minutes. Once browned, transfer to a plate.

Prepare the paella

Preheat a paella pan to a medium heat, add the onions and cook slowly until softened, about 10 minutes. Add the garlic and stir for 1 minute.

Stir in the spices, then add the rice. Stir to coat the rice in the oil and spices, then pour in the stock. Bring to the boil and add the [MOCK]® Chicken Pieces back into the pan. Simmer for about 20 minutes, stirring occasionally.

Add the peas to the pan and simmer for a further 5 minutes, until the rice is fully cooked. Season well and serve with the lemon and parsley.
